Fabulous Feta Salad

(NC) - This quick and delicious salad is especially good on those hot summer days when you don't want to go anywhere near the stove!
- 1 cup (250 mL) canned red kidney beans, rinsed and drained
- 1 cup (250 mL) each fresh tomatoes, and green pepper, diced
- 1 cup (250 mL) Feta cheese, diced
- 1/4 cup (60 mL) onion, chopped
- 1/2 tsp (2 mL) dried oregano
- 2 tbsp (30 mL) olive oil
- 1 tbsp (15 mL) lemon juice or wine vinegar
Combine olive oil, lemon juice or vinegar and oregano. Pour over other ingredients. Toss and season to taste. Served with wholegrain bread, it's a scrumptious four food group meal.
Serving Size: Makes 3-4 Servings
