Japanese Carrot Dressing

  • 1 small carrot (about 1/2 cup)
  • 2 tablespoon mirin
  • 2 tablespoon rice vinegar and/or cider vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon dark sesame oil (optional)
  • 1 tablespoon grated fresh ginger root (optional)
  • 1/4 cake silken (creamy) tofu (optional)


Put all of the ingredients in a blender and whirl them until smooth. Stored chilled in a covered jar, this dressing will keep for a week (less, if you use the tofu).
