Chicken in Orange and Cranberry Sauce

(NC) - This dish has a zesty flavour and is easy to prepare!
- 1 tsp. paprika 5 mL
- 1/4 tsp. lemon pepper 1 mL
- 4 boneless skinless chicken breasts or skinless chicken pieces
- 1/4 whole berry cranberry sauce 50 mL
- 2 oranges
- 3/4 orange juice 175 mL
- 2 tbsp. honey 25 mL
- 1/2 tsp. dried rosemary 2 mL
Carefully grate orange rinds to get the zest only (no white pulp).
Mix orange juice and cranberry sauce together and set aside.
Sprinkle chicken with paprika and lemon pepper.
Spray with a non-stick skillet with a non-stick cooking spray and heat medium-high.
Brown chicken pieces, 3-5 minutes per side.Reduce heat to medium-low and add orange
juice/cranberry mixture.Cover and cook until chicken is almost cooked about 5 minutes per side.
Stir in zest, honey and rosemary. Simmer for 5 minutes. Garnish with orange sections, fresh
dill and whole cranberries.
