Chicken Ball Appetizers

Perfect in a spaghetti sauce or with a dip as an appetizer!
- 1 lb ground chicken 500 g
- 2 egg whites (whisked) 2
- 1/4 cup water 50 mL
- 1/2 cup plain bread crumbs 125mL
- 2 tbsp grated parmesan cheese 25 mL
- 1 tbsp dried parsley 15 mL
- 2 tsp basil 10 mL
- 1 tsp tarragon 5 mL
- 1 clove garlic (chopped) 1
- pepper to taste
- cooking spray
Thoroughly blend all ingredients.
Shape into small balls about 1 inch in diameter.
Line a baking sheet with foil and spray lightly with cooking spray.
Preheat oven to 325 F.
Form balls and line up on sheet so that they are close but not touching.
Bake in oven for 20 minutes or until juices run clear.
Serve on cocktail picks with a dipping sauce or refrigerate for up to 2 days.
Appetizers may be reheated in a non-stick skillet, in the microwave or in a hot oven.
Serving Size: Makes 45 1-inch balls.
