Emeril's Fried Plantains

  • 4 each ripe plantains
  • 1 oil for frying
  • 1 salt
  • 1 freshly ground pepper


Preheat the fryer. Peel the plantains and slice thinly on the bias.

Fry in batches until golden brown, about 2 minutes, stirring occasionally. Remove from the oil and drain on paper towels. Season with salt and pepper.
