Bumbleberry Cobbler

Ingredients:

  • Filling:

    • 2/3 cup granulated sugar 150 mL
    • 3 tbsp cornstarch 45 mL
    • 2 tbsp lemon juice 25 mL
    • 2 cups peeled, chopped apples 500 mL
    • 1 cup each fresh raspberries, blueberries, strawberries* 250 mL

  • Crust:

    • 1 1/2 cups all purpose flour 375 mL
    • 2/3 cup granulated sugar 150 mL
    • 2 tsp baking powder 10 mL
    • 1/2 tsp salt 2 mL
    • 1/3 cup butter or margarine 75 mL
    • 1/2 cup 2% milk 125 mL

  • Topping:

    • 1 tbsp granulated sugar 15 mL

Directions:

In large bowl, combine sugar, cornstarch, and lemon juice. Stir in apples and berries. Transfer to

8" square (20 cm) pan. Meanwhile, in bowl, combine flour, sugar, baking powder, and salt. Cut in butter with pastry blender until mixture resembles coarse meal. Stir in milk just until moistened.

Spread or drop dough over fruit mixture. Sprinkle with sugar over the dough. Bake at 375 F (190C) oven for 30 -35 minutes or until the top is golden brown and juices are bubbling. Serve with softly whipped cream or vanilla ice cream.

*If you wish to use frozen berries, add an additional 1 tsp (5 mL) cornstarch for each cup (250 ml) of frozen berries.
