FOCCACIA (NC) - Five Roses Heritage Pasta Flour makes hearty, delicious breads. Try this fabulous flat bread
recipe or your own variation!
- 125 ml (1/2 cup) warm water
- 5 ml (1 tsp) sugar
- 8 g (1 pkg) dry yeast
- 90 ml (6 tbsp) extra virgin olive oil, divided
- 10 ml (2 tsp ) sea salt
- 375 ml (1 1/2 cups) warm water
- 875 ml (3 1/2 cups) Five Roses Heritage Pasta Flour
- 375 ml (1 1/2 cups) Five Roses All Purpose Flour (or as needed)
In a large bowl, dissolve sugar in 125 ml (1/2 cup) warm water. Sprinkle in yeast and let stand 5
minutes until foamy. Stir in 45 ml (3 tbsp) olive oil, and salt. With a wooden spoon gradually stir
in remaining warm water, Five Roses Heritage Pasta Flour and enough Five Roses All Purpose
Flour to make a firm, soft dough.
Turn out onto lightly floured surface and knead 10 minutes until smooth and elastic.
Place dough in a lightly greased bowl, cover with plastic wrap and let rise 11/2 to 2 hours,
until doubled in bulk. Punch down dough.
Use 22 ml (1 1/2 tbsp) of olive oil to grease 2 pizza pans. Press dough into pans, make
depressions in surface of dough with your fingertips and drizzle dough with remaining 22 ml (1
1/2 tbsp) of olive oil.
Bake at 190º C (375º F) for 25 minutes or until foccacia is golden brown. Fresh
or dried herbs, sautéed onions, garlic slivers, sea salt, cheese, etc. may be sprinkled over
dough before baking.
