Coca-Cola Cherry Jellied Salad

(NC) - Brighten up your holiday table with this festive Coca-Cola jellied salad. Use Cherry
Coke to help bring out the cherry flavour and colour. For a lighter salad, try
substituting the cola with Diet Coke, and try a light-style cherry gelatin and
calorie-reduced whipped topping.
- 2 cups boiling water
- 1 pkg (8 oz) cherry flavoured gelatin
- 1.5 cups Cherry Coke or Coca-Cola Classic
- 1 (14 oz) can of dark sweet cherries, drained and cut in half
- 2 - 2 1/2 cups whipped topping
Stir boiling water into gelatin for two
minutes or until it completely dissolves.
Stir in Cherry Coke and reserve 1.5
cups in a small bowl.
Put both bowls of the gelatin in the
fridge for 1 / 1.5 hours or until partially set (when a spoon drawn through
leaves an impression).
Spray a 6 or 7 cup mold with cooking
spray or wipe with a paper towel dipped in oil.
Mix the cherries in the large bowl of
gelatin and spoon into the prepared mold.
Refrigerate for about 30 minutes to set
but not firm.
Wisk the whipped topping into the small
bowl of gelatin until smooth and spoon on top of the mold.
Refrigerate for four hours or until
firm. Unmold onto a serving platter.
