Watermelon with Orange Beef

(NC) - Watermelon adds colour, taste and nutrition to this delectable stir-fry by acclaimed fusion chef Joseph Poon.

Ingredients:

  • 1/2 lb (250g) lean sirloin tip steak, thinly sliced
  • 2 tbsp (25 mL) vegetable oil
  • 1 tsp (5 mL) garlic, minced
  • 1 tsp (5 mL) ginger, minced
  • 1 tbsp (15 mL) orange zest (orange part only), soaked in 1 tbsp (15 mL) sherry
  • 1 cup (250 mL) watermelon slices
  • 1/2 cup (125 mL) cup snow peas
  • 1/4 red pepper, seeded & cubed
  • 1/4 yellow pepper, seeded & cubed
  • 1/4 red onion, cubed

Marinade

  • 2 tsp (10 mL) light soy sauce
  • 3 tbsp (45 mL) red wine
  • 1/4 cup (50 mL) water
  • 1/2 tsp (2 mL) sesame oil
  • 1 tsp (5 mL) cornstarch

Stir-Fry Sauce

  • 1/2 cup (125 mL) water or beef stock
  • 1/2 tsp (2 mL) oyster sauce
  • 1/2 tsp (2 mL) light soy sauce
  • 1 tsp (5 mL) sugar
  • 3 tbsp (45 mL) red wine
  • 1 tbsp (15 mL) hoisin sauce
  • 1/2 tsp (2 mL) cornstarch
  • 3 drops sesame oil

Directions:

Mix together marinade ingredients and marinate beef at least 30 minutes.

Sauté beef in 1 tbsp (15 mL) hot oil in a wok or large frypan on medium-high heat until brown on all sides. Remove from pan with slotted spoon and keep warm.

Heat remaining 1 tbsp (15 mL) oil in wok. Add garlic, ginger, orange zest, sherry and watermelon and sauté for 30 seconds.

Add snow peas, peppers and red onions, stirring constantly until tender.

Stir in the sauce (without cornstarch) and bring to a boil. Dissolve cornstarch in a few spoonfuls of cold water and stir into sauce. Let cook about 1 minute, until thick. Return beef to pan and mix thoroughly. Add sesame oil and serve.
