  • 1/4 cup beer or ale
  • 1 cup grated cheese
  • 1 tbsp. dry mustard
  • 1/4 tsp. each: salt and pepper
  • Pinch cayenne pepper
  • 1 egg beaten
  • 4 pieces of hot toast, buttered


In medium saucepan, combine beer, cheese, mustard, salt, pepper and cayenne pepper. Stir over low heat until cheese is melted and sauce is smooth and well blended.

In medium bowl, beat egg lightly; gradually add cheese sauce, stirring constantly until smooth.

Pour over hot buttered toast; brown lightly under broiler. Serve at once.
