Milk-Free Twenty-Minute Rice Pudding

(NC) - This nutrient-packed "baby" dessert will have the whole family grabbing a spoon for more!

Ingredients:

  • 2-1/2 cups water 625 mL
  • 8 scoops Nestle Carnation(r) Follow-Up Soy Infant Formula
  • 1 tsp vanilla 5 mL
  • 1/2 cup short-grain rice 125 mL
  • 2 tbsp milk-free margarine 25 mL
  • 1 tbsp granulated sugar 15 mL
  • Maple syrup or jam

Directions:

In medium saucepan, mix together water, infant formula and vanilla until well mixed; stir in rice. Bring to boil; reduce heat and simmer, stirring occasionally, for 20 minutes or until rice is tender. Remove from heat. Stir in margarine and sugar. Serve with maple syrup or jam.

Tip:

Substitute 1 cup Nestle Carnation(r) Instant Skim Milk Powder for the Infant Formula.

Serving Size: Makes about 2 cups (500 mL)
