Contributed by: News Canada (NC) - This is an easy summertime dessert, but its visual appeal - and its promise of a tantalizing taste treat - has made it a sensation with party guests. Small pieces are rich and satisfying so one pie can easily serve 10-12 people. You may, however, want to make one or two more with varying flavours, or change to ice cream blends, as suggested below, for a delicious taste surprise. Ingredients:
Directions: Base: Combine crumbs, sugar and almonds in a bowl, add butter until blended. Press crumb mixture onto the bottom and edges of a 10-inch/25 cm pie plate. Chill completely. Filling: The strawberry flavours are your pie filling. The chocolate ice cream is used to create perfectly-round scoops all over the top. Start by spreading half the strawberry ice cream over the chilled crust. Store in freezer. Mix strawberries with sugar, spread over the ice cream. Cover with remaining strawberry ice cream and freeze for at least one hour. Make round scooped chocolate balls for the topping by thawing the ice cream for 5 minutes. Cover the the pie completely. Freeze for several hours, or overnight before adding the sauce. Sauce: The sauce can be made ahead but is drizzled on the pie just before serving. Combine cocoa and sugar in saucepan and whisk in half of the cream to create a paste. Whisk in remaining cream. Cook over medium heat, stirring until sugar dissolves completely. Add butter and blend 5 to 6 minutes, until smooth and thickened. Set aside. Sauce can be refrigerated, then rewarmed to pouring consistency. Oh Henry! Party Pie An exciting alternative. For the filling, change the strawberry ice cream to the Breyers Blends', Oh Henry!. The chocolate-bar flavours of this ice cream are such a complete taste treat, there's no need to add the layer of strawberries. Top with chocolate scoops and sauce as in orginal recipe. Peanut ButterCup Pie Or, if you crave the peanut taste, make the pie filling from Breyers Blends' Reese's Peanut Butter Cups. Top with the chocolate scoops and sauce, and with all three pies, your dessert table is complete. Serving Size: Serves 10-12 people. |
