(NAPSI) - Cherries are no longer just a summertime treat. We can now look forward to plump, sweet Chilean cherries from November to mid-January. Cherries are a delicious, healthy alternative to the holiday cookies and candy. One cup of sweet cherries has only 90 calories, and is a good source of fiber and vitamin C. It also provides 325 mgs of potassium, about 9 percent of the daily requirement, and is naturally sodium and fat free. Cherries are also a sweet source of phytonutrients.
Cherries Jubilee is a classic dessert. This version, with low fat ice cream, is easy, delicious and provides one serving of fruit.
Pit cherries by inserting the tip of a vegetable peeler in the stem-end of the fruit; rotate around the pit and scoop it out.
Set pitted cherries aside. Combine sugar and cornstarch and blend in orange juice and water.
Cook over medium heat, stirring constantly, until thickened and smooth. Add the pitted cherries and orange peel; and bring to a simmer. Simmer for 10 minutes.
Serve warm sauce over ice cream.
