Directions: Peel and core apples; cut each into 8 wedges. Wash kumquats or oranges. Cut kumquats in halves or oranges in quarters, leaving peel on. Roll 1 Caramelized Walnut and 1 apple wedge in each slice of prosciutto. Alternately thread four prosciutto rolls and four kumquat halves or orange quarters on each skewer. Brush with olive oil. Place skewers on center of cooking grate and grill for 4 to 6 minutes or until apple is fork tender, turning once halfway through grilling time. Serve with chilled Expresso Sauce. Note: If using wooden skewers, soak in water 30 minutes before using so ends won't burn during grilling. Mutsu or Empire apples are good this time or year, and work particularly well in this recipe because they are both sweet and sour; they're similar to Granny Smith apples, but not as tart. Prosciutto is a special dry, smoked ham from Parma, Italy. Rich in flavour and texture, it takes on a wonderfully flavourful crispiness on the grill! Serving Size: Makes 6 Servings |
