Fresh Apricot Cobbler

(NC) - Cobblers are to many the gold standard of home comfort food, a cross between a pie and a crisp. A dessert like this one can feed a party of two, or a small crowd, and is ideal for gatherings of kin or friends. Fresh apricot cobbler is the dish for which families clamor and neighbors will ask you to bring to potlucks. The flavor shines through in this recipe where apricots halves are tossed with sugar, flour and cinnamon, than layered beneath a walnut shortcake topping.

Fresh Apricot Cobbler
Prep Time: 45 minutes


  • 6 cups fresh apricot halves (about 2 pounds)
  • 3/4 cup sugar
  • 2 tablespoons white or whole wheat pastry flour
  • 1/2 teaspoon cinnamon
  • 3/4 cup all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold
  • 1/2 cup chopped walnuts
  • 1/4 cup milk


Preheat oven to 425 F.

Toss apricots with next 3 ingredients; arrange evenly in ungreased 11 x 7 x 1-1/2-inch glass baking dish. Combine 3/4 cup flour and next 3 ingredients; cut in butter until mixture resembles fine crumbs. Stir in milk until mixture pulls away from sides of bowl and forms clumps. Gently stir in walnuts; drop 8 spoonfuls of dough on top of apricots.

Bake until dough is golden brown and filling bubbles, about 30 minutes. Serve warm or at room temperature.
