Flamed Strawberries with Brandy and Maille Red Wine Vinegar served with Vanilla Ice Cream

Contributed by: News Canada

"Berry" your tastebuds into delicious summer treats (NC) - With berry season approaching, many Canadian families will be heading outdoors to take advantage of the beautiful summer weather and engage in a wonderful summertime tradition -- strawberry picking. For those who just can't get enough of this perennial favourite and berries in general, Maille, makers of the world-renowned Maille Dijon Originale mustard and Maille vinegars from French Wine, has created savoury recipes to celebrate all things berry -- and all with a simple French twist.

For dessert, fire up the cool taste of vanilla ice cream. Glazed strawberries topped with a syrup of flamed brandy and Maille Red Wine Vinegar, work wonders with traditional vanilla ice cream. By adding berries to traditional dishes, Maille can help create new favourites to enjoy during the summer and throughout the year.

Ingredients:

  • 6 cups quartered strawberries
  • 1/4 cup butter
  • 1 tbsp Maille French Red Wine Vinegar
  • 2/3 cup brown sugar
  • 1/4 cup cooking brandy (whiskey is a good substitute)
  • 6 scoops vanilla ice cream
  • 6 bouquets fresh mint
  • 1/2 cup icing sugar
  • black pepper to taste

Directions:

Heat a large frying pan until hot but not smoking.

Melt the butter and quickly add the brown sugar followed by the strawberries. Move the strawberries continuously until they are coated with the butter and brown sugar mixture.

When the pan comes back to full heat flame with the brandy. Once the flame has died add the vinegar and black pepper.

Place the warm strawberries in individual bowls with some of the syrup and top with the vanilla ice cream and fresh mint.

Dust bowls with icing sugar and serve.
