Directions: Mix and bake cake mix, as directed, in a rectangle pan. Cool. Place cake on a large platter. Make 3 large slices lengthwise through the cake. Pour a large can of crushed pineapple in these cuts, juice and all. Mix a large vanilla instant pudding mix as directed, beat in a large cream cheese. Spread over cake. Icing: Bring a large Cool Whip to room temperature. Spread over cake, top and sides. Sprinkle coconut on top, finish with pecans. Notes: This cake is better if cooked the day before and put in the refrig. over night. It is a real winner for all. Men seem to really like this cake. It isnt too sweet. The cool whip and pudding mix blend the taste. You can make it using strawberrys or cherrys or whatever. You can also put it in a deep pan so you can carry easier. |
