Contributed by: News Canada (NC) - A fruity way to start your day - or end a meal. Ingredients:
Directions: Crepes: Combine all ingredients, whisking until smooth. Heat lightly greased 6" (15 cm) crepe pan or frying pan. Remove from heat. Spoon in about 3 tbsp (45 mL) batter. Lift and tilt pan to cover bottom with batter. Return to heat. Brown lightly; turn and brown other side. Repeat with remaining batter. Filling: Peel, core and thinly slice apples. Melt half of butter in frying pan. Add apple slices; sprinkle with sugar and cinnamon. Mix well. Cover pan; cook over medium heat, stirring occasionally until tender, about 10 minutes. Spread an equal amount of apple mixture on each crepe. Roll up. Melt remaining butter in small saucepan. Stir in syrup. Heat through and drizzle over crepes. Serve crepes warm with whipped cream. Tips: Prepare an extra batch of crepes for the freezer. Warm slightly to soften before rolling. Instead of whipped cream, try a scoop of vanilla ice cream. Serving Size: Makes 4 Servings |
