Vita-Mix and Celebrity Chef Jon Ashton have teamed up to promote childhood nutrition with cooking demonstrations that emphasize how fun and easy it is to add more whole foods into kidsí diets.
Heat olive oil in large saucepan over medium heat. Add leeks, fennel and saute about 5 minutes. Add remaining ingredients and bring to boil. Cover and simmer until potato is tender, about 15 minutes.
Puree soup in Vita-Mix machine in batches; return to same pot. Thin with more broth if needed. Season soup with salt and pepper to taste.
