Volcano Pancake

Rises high in the oven... take a peek.

Ingredients:

  • 6 eggs
  • 1 c, milk
  • 1 c, all-purpose flour
  • 1/2 tsp. salt
  • 1/2 c, butter or margarine, melted
  • 3/4 c. shredded cheddar cheese

Directions:

In a bowl, beat the eggs. Add milk, flour and salt; stir until smooth.

Pour butter into a 13-in. x 9-in. x 2-in. baking pan. Add batter.

Bake at 400-F for 30-35 minutes or until a knife inserted near the center comes out clean. sprinkle with cheese.

Serve immediately.
