(NC) - If you're a die-hard strawberry fan, you've probably tried every recipe you could get your hands on. If this is the season to add a new dish to your repertoire, look no further than this brunch-inspired dish from Imperial Margarine (www.homebasics.ca).
Mix together the ricotta cheese, yogurt, eggs, lemon rind, vanilla, sugar and melted margarine.
Sift together the flour, baking powder, baking soda and salt. Add the dry ingredients to the cheese mixture and stir until just combined. Heat a griddle on medium heat.
When the griddle is hot, spray the surface with a non-stick cooking spray and spoon out 3 tablespoons of batter for each pancake. Spread the batter into 3-inch circles and cook until both sides are golden brown.
For the strawberry sauce, combine the strawberries, lemon juice and honey. Serve sauce on top of the pancakes.
