French Toast with Raspberries

"Berry" your tastebuds into delicious summer treats (NC) - With berry season approaching, many families will be heading outdoors to take advantage of the beautiful summer weather and engage in a wonderful summertime tradition - strawberry picking. For those who just can't get enough of this perennial favourite and berries in general, Maille, makers of the world-renowned Maille Dijon Originale mustard and Maille vinegars fbom French Wine, has created savoury recipes to celebrate all things berry - and all with a simple French twist.

Although the pairing of berries and vinegar may seem like an unusual combination at first glance, vinegar and sugar help neutralize the acidity of the berries to help create an unbelievably sweet sensation. An easy one to try out is adding glazed raspberries with Maille Wine Vinegar with Raspberry Juice to breakfast favourite French toast.

Ingredients:

  • 6 tbsp Maille French Red Wine Vinegar with Raspberry Juice
  • 6 thick slices brioche bread
  • 1/2 lb raspberries
  • 2/3 cup confectioners' sugar
  • 1/4 lb butter
  • 2/3 cup milk
  • 2 eggs

Directions:

Heat the milk and add 1/3 cup of sugar. Stir to dissolve.

Beat the eggs together well. Dip the slices of bread quickly in the milk and then in the egg mixture.

Drain off the excess liquid, melt the butter in a skillet and brown the slices on both sides. Remove the bread and put to one side.

In the same skillet, caramelize the remaining sugar and add the raspberries. Coat them with the sugar and remove immediately.

Cover the slices of French toast with the berries. Deglaze the raspberry juice and sugar with vinegar.

Reduce the liquid, then pour over and serve.

Serving Size: Serves 4
