Skillet Cornbread Adds Sizzle To Low-Carb Lifestyle

(NAPSA) - Nothing brings friends and family together like a delicious home-cooked brunch. But with low-carb lifestyles on the rise, it can be a challenge for hosts and hostesses to present great-tasting dishes that all guests can indulge in.

Thankfully, armed with the right recipe and low-carb product, it can be easy to cook up traditional favorites everyone can enjoy.

This simple Skillet Country Brunch is an ideal dish for a mid-morning start or potluck picnic. Using Krusteaz CarbSimple(r) Cornbread Mix, this meal reunites carb counters with the great taste of baked goods while still appealing to every palate.

While this dish takes less than 45 minutes to make, cornbread batter is quickly prepared by simply adding water and eggs. Next, carb-friendly foods-such as crumbled bacon, cheddar cheese and sour cream-are added to the batter, then poured into a hot skillet and baked to a golden perfection.

At just nine net carbs per serving, this flavorful dish takes the guesswork out of entertaining guests by ensuring that everyone can enjoy their meal, and the flavor, without an ounce of guilt.


  • 8 oz. uncooked bacon
  • 1/3 cup water
  • 2 eggs
  • 1 pkg. (11.25 oz.) Krusteaz CarbSimple Cornbread Mix
  • 1 cup grated cheddar cheese
  • 3/4 cup sour cream
  • 1/4 cup chopped green onions


Preheat oven to 375 F.

In 9-inch ovenproof skillet, cook bacon over medium heat until crisp. Drain on paper towels and cool. Crumble bacon into small pieces. Set aside.

Reserve 2 tablespoons bacon fat in skillet. Place water and eggs in mixing bowl. Whisk together until blended. Add cornbread mix, crumbled bacon, cheese, sour cream and green onions. Stir until moistened. Spoon batter into hot skillet.

Bake 20-25 minutes or until golden brown and a toothpick inserted into center comes out clean.

Serving Size: Makes 12, 2 1/2 x 2-inch Servings
