Contributed by: News Canada (NC) - These tasty bites are reminiscent of breakfast bars but better with moist pieces of apple to munch away on. Use red skinned apples and leave the skin on so you can see the great colour in the squares and add some fibre too! Ingredients:
Directions: In bowl, whisk together sugar, oil, milk, eggs and vanilla until smooth. In large bowl, combine flour, baking powder, cinnamon, nutmeg and salt. Add sugar mixture to flour mixture. Stir in apple and raisins until combined. Spread evenly into greased 13 x 9-inch (3.5 L) baking pan. Bake in 350 F (180 C) oven for 15 to 20 minutes or until tester inserted in centre comes out clean. Let cool before cutting into squares. (Make-ahead: Can be stored in airtight container in refrigerator for up to 3 days.) Tip: You could use pears instead of the apples for a different fruit flavour. Serving Size: Makes 24 Squares |
