Pumpkin Bran Muffins

  • 1 c. wheat bran cereal (not flaked) or raisin bran
  • 1/2 c. undiluted Carnation evaporated milk
  • 1- 1/4 c. all purpose flour
  • 2/3 c. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground cloves
  • 1 c. Libby's solid pack pumpkin
  • 1/2 c. vegetable oil
  • 1 egg, slightly beaten
  • 1/2 c. raisins
  • 3 Tbsp. cinnamon-sugar


In medium bowl, combine cereal and milk. Let stand ten minutes or until milk is absorbed. In large bowl, combine flour, sugar, baking powder, cinnamon, salt, nutmeg, and cloves.

Set aside.

Add pumpkin, oil, egg, and raisins to cereal. Add liquid ingredients to dry ingredients. stir just until moistened. Spoon batter into greased muffin cups, filling to top. Sprinkle each muffin with one teaspoon cinnamon-sugar. Bake in preheated 400 degree oven for 25-30 minutes or until wooden toothpick comes out clean.

Cool in pan on wire rack 3-4 minutes, then remove and cool.
