Vanilla Coke Ho-Ho-Holiday Cookies

(NC) - Looking to leave Santa a special treat this holiday season? There’s no better way to increase your odds for a full stocking by leaving Jolly Ol’ Saint Nick a plateful of Vanilla Coke Oatmeal Cookies.


  • 3/4 cup of butter or shortening, softened
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup Vanilla Coke or Coca-Cola Classic
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups quick-cooking oats
  • 1 cup raisins


Preheat oven to 375 F.

Cream butter, brown sugar, granulated sugar, egg and vanilla extract in a large mixing bowl for about 1 / 1 1/2 minutes or until light and fluffy.

In a separate bowl, mix flour, baking soda and salt. Add alternatively with Vanilla Coke to the creamed mixture. Beat well at low speed or with a large wooden spoon until well mixed.

Stir in oats and raisins.

Drop by rounded tablespoons onto a lightly creased cookie sheet.

Bake for 10 / 12 minutes or until lightly browned. Cool on rack.

Serving Size: Makes 2 dozen cookies
