Vanilla Coke Ho-Ho-Holiday Cookies

(NC) - Looking to leave Santa a special treat this holiday season? There’s no better way to increase your odds for a full stocking by leaving Jolly Ol’ Saint Nick a plateful of Vanilla Coke Oatmeal Cookies.
Ingredients:
- 3/4 cup of butter or shortening, softened
- 1/2 cup firmly packed brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup Vanilla Coke or Coca-Cola Classic
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups quick-cooking oats
- 1 cup raisins
Directions:
Preheat oven to 375 F.
Cream butter, brown sugar, granulated
sugar, egg and vanilla extract in a large mixing bowl for about 1 / 1 1/2
minutes or until light and fluffy.
In a separate bowl, mix flour, baking
soda and salt. Add alternatively with Vanilla Coke to the creamed mixture. Beat
well at low speed or with a large wooden spoon until well mixed.
Stir in oats and raisins.
Drop by rounded tablespoons onto a
lightly creased cookie sheet.
Bake for 10 / 12 minutes or until
lightly browned. Cool on rack.
Serving Size: Makes 2 dozen cookies
