Contributed by: News Canada FOCCACIA (NC) - Five Roses Heritage Pasta Flour makes hearty, delicious breads. Try this fabulous flat bread recipe or your own variation! Ingredients:
Directions: In a large bowl, dissolve sugar in 125 ml (1/2 cup) warm water. Sprinkle in yeast and let stand 5 minutes until foamy. Stir in 45 ml (3 tbsp) olive oil, and salt. With a wooden spoon gradually stir in remaining warm water, Five Roses Heritage Pasta Flour and enough Five Roses All Purpose Flour to make a firm, soft dough. Turn out onto lightly floured surface and knead 10 minutes until smooth and elastic. Place dough in a lightly greased bowl, cover with plastic wrap and let rise 11/2 to 2 hours, until doubled in bulk. Punch down dough. Use 22 ml (1 1/2 tbsp) of olive oil to grease 2 pizza pans. Press dough into pans, make depressions in surface of dough with your fingertips and drizzle dough with remaining 22 ml (1 1/2 tbsp) of olive oil. Bake at 190º C (375º F) for 25 minutes or until foccacia is golden brown. Fresh or dried herbs, sautéed onions, garlic slivers, sea salt, cheese, etc. may be sprinkled over dough before baking. Serving Size: Makes 8-12 servings. |
