    Spring Vegetable Rice Salad

  • Eat more frequently (every two to three hours). Going longer without food can send your blood sugar and energy levels plummeting, which can make you crave high-sugar, high-fat foods. To eat smarter during a busy day, consume nutritious low-fat and low-sugar snacks between meals. Try fruits or nuts.   • 1 cup halved cherry tomatoes

  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon grated lemon peel
  • 1 tablespoon lemon juice


Prepare rice according to package directions. Toss rice with tomatoes and asparagus in medium bowl. Mix remaining ingredients until well blended. Add to rice mixture; toss to coat.

Serve immediately or refrigerate.
