(NC) - This quick and delicious salad is especially good on those hot summer days when you don't want to go anywhere near the stove!
Ingredients:
1 cup (250 mL) canned red kidney beans, rinsed and drained
1 cup (250 mL) each fresh tomatoes, and green pepper, diced
1 cup (250 mL) Feta cheese, diced
1/4 cup (60 mL) onion, chopped
1/2 tsp (2 mL) dried oregano
2 tbsp (30 mL) olive oil
1 tbsp (15 mL) lemon juice or wine vinegar
Directions:
Combine olive oil, lemon juice or vinegar and oregano. Pour over other ingredients. Toss and season to taste. Served with wholegrain bread, it's a scrumptious four food group meal.
