Baked Brie with Sauteed Apples and Brown Sugar

Baked Brie with Sautéed Apples and Brown Sugar

For a great appetizer that uses autumn's favourite fruit, try Fabrizio's Baked Brie with Sautéed Apples and Brown Sugar.


  • 1 sheet frozen puff pastry
  • 1 large egg
  • 1 Tbsp water
  • 1 large Granny Smith apple, peeled, cored, cut in half vertically
  • 2 Tbsps unsalted butter
  • 1/4 cup firmly packed light brown sugar
  • 1 (8oz) Brie cheese round, sliced in half horizontally


Thaw the puff pastry sheet at room temperature for 30 minutes. Preheat the oven to 400 F. Combine the egg and water in a small bowl and set aside.

In a Cuisinart food processor, fitted with the medium slicing disc, slice the apple halves using light pressure. Melt the butter in a small Cuisinart saucepan over medium heat. Add apple slices and brown sugar and sauté until apples are slightly softened, about 5 minutes. Remove apples from heat and allow to cool slightly.

Unfold the pastry sheet onto a lightly floured surface and roll into a 14-inch square. Cut off corners to make a circle. Place one half of the Brie, cut side up, in the center of the pastry sheet. Top the cheese with half of the warmed apples. Place the remaining Brie, cut side down, on top of the apples. Top the cheese with the remaining apple mixture. Brush the edges of the pastry with the egg wash and fold two opposite sides over the cheese. Trim the remaining two sides to 2-inches from the edge of the cheese. Brush the pastry with egg wash and fold onto the cheese. Press the edges to seal. Place the Brie and apple pastry seam side down on baking sheet and brush with any remaining egg wash.

Bake until golden brown, about 20 minutes. Let the cheese and pastry stand for 15 minutes before serving. Serve with crackers.
