Chipotle Spiced Peanuts

(NC) - As a quick bite before working out or for energy-on-the-go, this super simple snack is sure to tide you over until the next meal. These spiced peanuts can be prepared in advance and stored in easy-to-grab single serve baggies in the freezer. If unexpected guests drop by, transform these spicy peanuts into a cocktail treat by serving them in a small stylish bowl, along with a refreshing beverage.

Ingredients:

  • 4 large egg whites 4
  • 1/4 cup water 50 mL
  • 4 lbs raw shelled peanuts 1.8 kg
  • 2 cups superfine sugar 500 mL
  • 1/4 cup fine salt 50 mL
  • 1/4 cup ground chipotle powder 50 mL
  • 2 tbsp ground coriander 25 mL
  • 4 tsp ground allspice 20 mL
  • 2 1/2 tsp ground cumin 12 mL

Directions:

Preheat oven to 300°F.

Beat egg whites and water in large bowl until frothy. Add peanuts and toss well to coat. Drain in colander and let sit for 8 minutes.

Combine sugar, salt, chipotle powder, coriander, allspice and cumin in separate bowl.

Toss peanuts with sugar-spice mixture to coat.

Spread peanuts on sheet pan(s) in single layer(s). Bake for 12 minutes. Shake the sheet pan(s) to stir peanuts and reduce oven temperature to 275°F. Bake 55 minutes longer, shaking occasionally. Remove from oven and stir peanuts to loosen; allow to cool 30 minutes. Store in an airtight container or freeze.

Serving Size: Makes 15 Cups/3.75 L

Nutritional Information: Per 1/4 Cup (50 mL) Serving: 216 calories, 8.2 g protein, 15 g total fat (of which 7.4 g is monounsaturated), 12 g carbohydrates.
