Kickin' Chicken Sandwich

(NC) - According to Canada's Food Guide, children 2-13 require one to two servings of meat and alternatives each day. That would be 75 g - 150 g of lean poultry beef, or fish for the entire day. Lunch sandwiches only require 44 g - 75 g, or roughly two to four slices of cooked meat or poultry. Read the label to determine serving size.

This recipe makes one sandwich for a child 2-8 years old:

Ingredients:

  • 2 slices Wonder+ whole wheat bread
  • 1 1/4 oz. (44 g) lower sodium, lean, oven roasted chicken or turkey
  • 1 leaf romaine lettuce, rinsed and dried
  • 4 thinly sliced English cucumber rings
  • 2 tsp. (10 mL) margarine (optional)

Directions:

Gently spread the margarine evenly over the Wonder+ whole wheat bread.

Tear romaine lettuce in half diagonally. Place one of the halves on top of one slice of the bread.

Top with chicken (or turkey). Place cucumber slices on top.

Cover with the rest of the lettuce. Place second piece of bread margarine side down on top, gently press down and cut in half.

Wrap in wax paper or place in a reusable plastic sandwich container.

Up the nutrient ante:

Feel free to substitute cucumber for red pepper rings and romaine lettuce for baby spinach.

Leftover roasted chicken or turkey breast is the ideal choice for this sandwich.

Store bought deli meats tend to be very high in sodium, so if you are buying them, make sure that you check out the label and choose the one with that has been oven roasted and has the least amount of fat and sodium. The average slice is about 1 1/4 oz. (44 g) and is a perfect amount for a child. Make sure to read the label to determine serving size.
