To get into the spirit, go beyond wearing green and drinking green beer on St. Patty's Day. Why not eat green too? Thanks to Go South! Fresh from the Southern U.S., we're able to enjoy fresh fruits and veggies year round. There are many fresh green vegetables that are available in your local grocery store. Enjoy cabbage, celery, green beans, green peppers, leafy greens, spinach and all of the nutrients that they offer:
So instead of eating greasy food at your local pub, why not invite friends over for a St. Patty's get-together and enjoy a green theme in your own home. Our Go South! chef, Nicole Young, recommends some traditional favourites like beer, cabbage and sausage. Beer Simmered Cabbage Snd Sausage: In skillet cook 1 lb (500 g) sausage over medium heat, turning often, until golden. Add 4 cups (1L) chopped Southern U.S. cabbage with 1 cup (250 mL) dark beer. Cover, reduce heat and simmer until cabbage is tender and sausage is cooked through. Makes 4 to 6 servings. Green Pepper Guacamole: Place 1 clove garlic and 1 large seeded, coarsely chopped Southern U.S. green pepper in food processor or blender. Process using pulsing action until very finely chopped. Add flesh of 2 avocados to blender; process until smooth. Pour mixture into medium-sized bowl; stir in 1-2 tbsp (15-30 mL) of lime juice, 1 tbsp (15 mL) finely chopped cilantro, 1/2 cup (125 mL) diced sweet onion, 1 finely diced jalapeno pepper and salt to taste.
