Contributed by: NewsUSA Fish Without the "Fishy" Taste (NewsUSA) - While most Americans know that fish is lean and healthy, many fail to eat it twice weekly, as the American Heart Association recommends. And the reason for this is simple -; they dislike "fishy" tasting food. U.S. Farm-Raised Catfish, for example, eat a specially formulated diet of high-protein, natural grains, so their flavor remains consistently mild. These catfish are always taste-tested before harvesting, so they are sure to please the family's palates every time. Catfish is quick and easy to prepare, too. This recipe for U.S. Farm-Raised Catfish Ranchero will provide a delicious, family-friendly meal in only 15 minutes: Ingredients:
Directions: Preheat the oven to 450 F. Lightly oil a baking sheet. Cut the catfish fillets in half. Mix the crushed tortilla chips, chili powder, salt and pepper in a shallow dish. Mix the lime juice and oil in another shallow dish. Dip the catfish in the lime mixture, then coat the catfish in the tortilla crumbs. Place the fillets on a prepared baking sheet. Sprinkle the catfish with the remaining tortilla crumbs. Bake the catfish 8 to 10 minutes, until the fish flakes easily when tested with a fork. Warm the salsa in a small saucepan over low heat. Arrange the catfish on a serving plate, and spoon the salsa over the fillets. Sprinkle the catfish with fresh cilantro and serve.
