Magda Scrambled Eggs

Combine Dijon mustard and eggs for memorable summer brunches (NC) - The
summer months offer an ideal opportunity for long, leisurely weekend brunches. Add a new sophisticated twist to brunch selections by including Maille Dijon mustards. Too often, it is assumed that Dijon mustard is a condiment that should be used solely as a spread for sandwiches
and meats. However, Maille Dijon mustards offer a world of possibilities. Whether a quick breakfast or a more elaborate brunch, Maille Dijon mustards can add a unique, unexpected flavour.
Ingredients:
- 8 eggs
- 1/3 cup whipping cream (35%)
- Salt and pepper
- 1 tbsp butter
- 3/4 cup grated cheese
- 1 tbsp Maille Dijon Originale mustard of Maille Fine Selection mustard
- 1 tbsp chopped mixed herbs
- 4 slices white bread
Directions:
Combine eggs, cream, salt and pepper in medium-sized mixing bowl and beat mixture until
smooth.
Heat the butter in large saucepan. Pour egg mixture into saucepan and cook, stirring, until
creamy.
Add the cheese, Maille Dijon Originale or Fine Selection mustard and herbs. Reduce heat and
keep warm.
Toast the bread and cut each slice into four triangles.
Serve the scrambled eggs with the toast triangles positioned around the edge of each dish.
