Quick Winter Stew

Quick Winter Stew
Start out your family with this simple stew rich with generous chunks of meat and aromatic vegetables in a rich sauce.

Ingredients:

  • 1 tbsp vegetable oil
  • 1 lb boneless pork loin or leg, cut in narrow strips
  • 1 3/4 cup water
  • 1 pkg Knorr Demi-Glace Sauce Mix
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme (optional)
  • 3 cups cubed (1/2 inch, 1 cm) mixed vegetables (e.g. carrot, potato, cauliflower, winter squash, turnip, parsnip)
  • chopped fresh parsley (optional)

Directions:

In a large skillet, heat oil over medium-high heat. Add pork and stir fry until golden brown; remove and set aside. Reduce heat. Add water, whisk in Knorr Demi-Glace Sauce mix, mustard, and thyme and bring to a boil, whisking constantly. Stir in vegetables; cover and simmer about 15 minutes or until vegetables are tender, stirring occasionally.

Return pork to skillet and heat through. Serve, sprinkled with parsley if desired, and with a hearty multi-grain bread.

Tip:

Substitute lean beef or lamb for pork. As an extra time saver, substitute frozen mixed vegetable pieces for fresh vegetables; cook 5 minutes or until tender.
