Sweet Potato Pie

"Caj's Canadian Connection, Rhonda, Ottawa, Ontario, sent an interesting Dessert Psychology Test, that's worth sharing.

"Rhonda writes, 'If you were making a dessert and you had your choice, which would you choose?

  • Angel food
  • Brownies

"There are eight desserts listed in Rhonda's email, but da ol' mon will only use two this time, and save the rest for later.

"She continues, 'Okay, now that you've made your choice, this is what research says about you!

Angel food: Sweet, loving, cuddly. You love all warm and fuzzy items. Little nutty at times. Sometimes you need an ice cream cone at the end of the day. Others perceive you as being childlike and immature at times.

Brownies: You are adventurous, love new ideas, are a champion of underdogs and a slayer of dragons. When tempers flare up, you whip out your saber. You are always the oddball with a unique sense of humor and direction. You tend to be very loyal.

"How much is true? Good question. But the real question is, If your favorite dessert is Sweet Potato Pie, what does that say about you. Hmmm....... Ol' mon Caj isn't going to touch that with a 10-foot pole. Nope, no way. There is, however, one thing that needs to be said, Enjoy this Soul Food-Southern Recipe, it's the greatest," Caj.

Sweet Potato Pie (RW's)

BEAT well in mixer:

  • 2 cups mashed potatoes, hot
  • 1 stick oleo
  • 2 eggs
  • 1 1/2 cups sugar

ADD:

  • 1/2 cup evaporated milk
  • 1 cup sweet milk
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1 teaspoon salt

PUT crust in oven 5 to 8 minutes; POUR in filling. BAKE at 375°F for 35 to 40 minutes.

Well, there you have it. BON APPETIT!
